Iced lemon with mascarpone

Let us introduce an incredibly fresh and refreshing dessert that is a true summer favorite at Byon!


You will need:

  • 5 lemons
  • 250 g mascarpone
  • 200 ml lemon juice
  • 200 g condensed milk
  • 100 g pre-whipped cream
  • 200 ml whipping cream
  • 2 tbsp sugar

Instructions:

1. Start by cleaning the lemons and then let them dry. Then, cut off the top and also the bottom of the lemon so that it can stand upright. Be careful not to cut off too much of the lemon!


2. Scoop out and empty the lemons, but save the lemon juice! Be careful to strain the juice from the pulp and seeds.


3. In a bowl, add 200 ml lemon juice, 250 g mascarpone cheese, and 200 g condensed milk. Using an electric mixer, gently blend to get a smooth cream without lumps. Set aside 100 ml to mix later with the whipped cream.


4. Whip the cream until it's just right, not too grainy. Then, mix it together with the lemon cream and place it in a piping bag with a wide and wavy tip.


5. Fill the lemons with the lemon cream and place them in the freezer. Fill the piping bag with cream, but also save some for serving. Finish with a playful decoration, perhaps rosemary, raspberries, mint, or more lemons? In Byon's world, there are no rules. Enjoy!
